The appeal of bananas: A qualitative sensory analysis and consumers’ insights into tropical fruit consumption in Italy

A study conducted by the University of Turin, Italy, explored the relationship between the quality of bananas (Musa spp.) at different ripening stages and consumer preferences in Italy. The research had two main objectives: to assess the qualitative and sensory characteristics of bananas at three commercial ripening stages, and to investigate Italian consumers' habits, perceptions, and preferences related to tropical fruits, with an emphasis on quality, health, and sustainability.
The findings revealed that ripe bananas were preferred by a sensory panel and maintained high-quality attributes even after five days of room temperature storage. Additionally, consumers demonstrated a strong interest in the sustainability of tropical fruits, with ripeness being an important factor in their decision-making. The study also highlighted varying levels of awareness and purchasing behaviors among consumers.
The connection between sensory analysis and consumer preferences provided valuable insights for optimizing the banana supply chain. The study suggests that better management of banana distribution, improved communication strategies, and a focus on sustainability could help satisfy consumer preferences, reduce waste, and enhance overall supply chain sustainability.
