Effects of freezing time on degradation of durian (Durio Zibethinus Murr.) fruit’s attributes during the frozen storage

Conducted by the Ministry of Agriculture in Indonesia, this study investigates the influence of freezing processes and storage duration on the attributes of durian. By employing two freezing treatments at varying durations, the research assesses the impact of freezing and subsequent storage. Treatment B, characterized by an extended freezing time, demonstrates superior outcomes compared to Treatment A. Notably, Treatment B results in lower weight loss, brighter and lighter pulp color, softer pulp, reduced moisture content, and maintained succinate acid profiles. The fruits from Treatment B receive positive feedback in preference evaluation tests. This research provides valuable insights into optimizing freeze-processing techniques for preserving durian, crucial for enhancing the quality and marketability of this tropical fruit during distribution.
